I love food! I always have the energy to prepare a good meal at the end of the day and I love to take home recipes that I’ve picked up or have been recommended from other cultures!
American Pancakes
I’ll admit that the Americans do breakfast VERY well. I was so tired of standing over crepes for hours whilst I didn’t get to eat any so I go this recipe from a New York friend and have to say these cakey, fluffy pancakes are so filling you only need two.
Batter makes 4 pancakes:
- 135g plain flour
- 1tsp Baking Powder
- 1/2tsp Salt
- 2tbsp Sugar
Mix dry ingredients together
- 2tbsp Melted Butter
- 150ml Milk
- 1 Egg
Whisk wet ingredients and add dry to this mixture. IT will feel very thick but still pourable (kind of viscous). Put some butter or oil in a small pan and spiral the batter from the centre into a thick disc shape.
Flip the pancake when bubbles form on the surface.
EAT!
